There’s nothing quite like a fluffy, crumble-top, bakery style muffin. Perfectly bouncy on the inside, and crisp on the outside. While delicious, baking muffins from scratch can be time-consuming and off-putting. So we decided to share our go-to, simple recipe for blueberry muffins. They’re sweet, zesty, and of course, tasty. Plus, we topped them with a cinnamon Dandy Blend crumble. The best part? No one would ever know they started out as a box recipe.

What Makes These Blueberry Muffins Healthy(ish)?

We like to say these blueberry muffins are healthyish, because of the quality of the ingredients we use. You can absolutely swap out the box mix you buy and the add-in brands you use. The pre-packaged box we like is the gluten-free King Arthur muffin mix. It’s a plain foundation so you can add whatever you like to it. We use grass-fed and finished butter, raw almond milk, coconut sugar, wild blueberries, and organic orange zest as a few of our add-ins, because they’re ingredients we feel good about. However you spice up or down this recipe is up to you, it will come out delicious either way!

How to Make Blueberry Muffins with Dandy Blend Crumble Top

To make this healthy muffins recipe, start by reading the oven temperature on the box you’re using. For King Arthur, it’s 375° F. Next, start by whisking your base ingredients together. We used grass-fed and finished butter, raw almond milk, and pasture-raised eggs. Next, add in the zest of one large orange and the flour mixture. Whisk until smooth. Finally, add in a cup and a half of frozen blueberries. You can use fresh berries, but we find that frozen ones hold their shape better while baking. Divide your mix into muffin cups or greased muffin tins, then let them sit while you make the crumble top.
We may be biased, but this cinnamon Dandy Blend crumble top is the best part about these muffins. Simply mix together flour, butter, sugar, Dandy Blend, and cinnamon and mix until it becomes a sandy texture. Sprinkle a little bit on each muffin, then bake according to the package. King Arthur muffins cook for between 18 and 25 minutes.

Once fully baked (a toothpick should come out clean), then remove from the oven and let sit for about 10 minutes before serving. Enjoy alongside a delicious cup of Dandy Blend.

Recipe

Healthyish Blueberry Muffins Ingredients:

  • 1 Muffin Box Mix and ingredients necessary (we like King Arthur’s gluten free mix)
  • Zest of one large orange
  • 1 ½ cups frozen blueberries

Cinnamon Dandy Blend Crumble Ingredients:

  • 2 tablespoons butter, softened
  • ¼ cup flour (we like King Arthur’s 1:1 gluten free flour)
  • ¼ cup coconut sugar
  • 1 teaspoon Dandy Blend
  • ¼ teaspoon ground cinnamon

Directions:

  1. Set your oven to the temperature listed on the box mix.
  2. Begin making your base according to package directions. Before adding the flour, add the zest of one large orange. After combining with flour, add blueberries.
  3. Divide batter into muffin liners or a greased muffin tin, then make the crumb topping.
  4. Add all the crumble top ingredients to a small bowl and mash with a fork or your hands until a sand-like texture is achieved.
  5. Sprinkle evenly over muffin batter, then bake as directed on the package.
  6. Remove from the oven, let cool for about 10 minutes before enjoying.
