What Are No Bake Cookies
No bake cookies are cookies that come together without needing to bake in the oven. Most no bake cookies are held together with nut butters or traditional butter, and omit eggs. They are a great way to enjoy something sweet without the bake time. Our recipe does need some time to set in the fridge, but no one’s stopping you from skipping that step altogether if you’re antsy for a treat. The chilling just helps firm them up a bit.
How to Make No Bake Chocolate Chip Cookies with Dandy Blend
These no bake chocolate chip cookies with Dandy Blend require zero heat and just a few tasty ingredients. You’ll need a little melted butter, vanilla extract, coconut sugar, milk of choice, Dandy Blend, salt, oat flour, and chocolate chips. Once your butter is melted, stir in the coconut sugar. Once combined, add your milk and vanilla extract. Slowly fold in the dry ingredients until incorporated, then mix in your chocolate chips. If the dough seems dry, add more milk one tablespoon at a time. Scoop the dough into balls, place on a parchment lined baking sheet, then gently flatten them into cookie shapes. Refrigerate for at least 20 minutes to allow the dough to firm up and enjoy. You can eat them immediately or store them in the fridge for 7-10 days.
No Bake Chocolate Chip Cookies with Dandy Blend Recipe
Ingredients:
- 2 tablespoons butter, melted
- 1 teaspoon vanilla extract
- 1/2 cup coconut sugar
- 3 tablespoons milk, adding more if needed
- 1 teaspoon Dandy Blend powder
- 1/2 teaspoon salt
- 1 1/2 cup oat flour
- 1/2 cup chocolate chips
Directions:
- In a large bowl, combine the butter and coconut sugar. Then add the milk and vanilla extract.
- Slowly fold in the oat flour, Dandy Blend, and salt until incorporated. Then add in the chocolate chips.
- Using a cookie scoop or your hands, roll dough into a ball then place on a parchment-lined baking tray. Press down to form a flatter cookie shape. Repeat.
- Refrigerate for at least 20 minutes. Enjoy once set or store in the fridge for 7-10 days.
