Halloween is approaching, and whether you still indulge in the nostalgic treats you grew up with or not, everyone has a favorite candy. Chocolate-y peanut butter cups, sour bears, controversial licorice, and other varieties end up piled on the kitchen table for everyone to sort and barter. We like to have a few homemade options on hand, that way you can enjoy the festivities without the lengthy (and sometimes questionable) ingredient list in the back of your mind. Today, we’re sharing a delicious homemade coconut mounds recipe made with a chocolate Dandy Blend shell.
What are Coconut Mounds
Coconut mounds are a candy full of sweet, sticky shredded coconut that gets covered in a chocolate shell. It’s a slightly lighter option to the heavy caramel and nut butter-stuffed chocolate treats, but equally tasty. They make for a great midnight snack and are nice to have on hand around Halloween so that you (and your kiddos) can enjoy a homemade version of a classic.

How to Make Homemade Coconut Mounds
With a blender and stovetop, you can make these perfect homemade coconut mounds in less than an hour. Start by lining a baking sheet with parchment or wax paper. Add shredded coconut, coconut oil, and sweetener of choice (we like maple syrup) to a blender and mix until just combined. You still want some coconut flakes intact for texture. Using your hands or a cookie scoop, create small mounds of the coconut mixture and place on your baking sheet with about an inch between each mound. Refrigerate for about 30 minutes or freeze for about 15. Just before they firm up, make your chocolate mix. If you prefer not to use the microwave, you can use the double-boiler method to melt chocolate, Dandy Blend powder, and a little coconut oil down to create the chocolate shell. Use a fork to carefully dip the coconut mounds in the chocolate, and then transfer back onto the parchment paper (or a wire rack), to harden. Store in the refrigerator or freezer to avoid melting.
Homemade Coconut Mounds with a Chocolate Dandy Blend Shell
Ingredients:
- 1 1/2 cups unsweetened shredded coconut
- 3 tbsp pure maple syrup or honey
- 2-3 tablespoons coconut oil
- ¼ cup chocolate chips
- 2 teaspoons Dandy Blend powder
- 1 teaspoon coconut oil
Directions:
- Line a baking sheet with parchment or wax paper.
- Blend the shredded coconut, oil, and sweetener of choice on medium until well combined, but still slightly chunky. If they aren’t sticking together well, add another tablespoon of coconut oil and re-blend.
- Scoop small oval or circle shapes with a cookie scoop or your hands, and line on the baking sheet, at least an inch apart.
- Chill in the refrigerator for about 30 minutes or freezer until hard, about 15 minutes.
- In a microwave or over the stove, melt the chocolate, Dandy Blend powder, and coconut oil together until smooth. Watch closely as the chocolate can burn quickly.
- Use a fork to carefully dip the cold coconut mounds in chocolate, then chill to set. Store in the fridge or freezer to avoid melting.
