How to Make Easy Healthy Banana Muffins with Dandy Blend

We say this about a lot of our recipes, but this recipe truly is one of our easiest. Start to finish, you could be enjoying a warm bite of these easy banana muffins in half an hour. Gather all of your ingredients and add them to a high-speed blender. Start with the wet ingredients—ripe bananas, eggs, and maple syrup—and then finish with the dry ingredients. This includes cinnamon, Dandy Blend, baking soda, oats, and salt. Once well combined, you’ll distribute to your muffin tin and bake at 350ºF for about 12-15 minutes. You can tell if they’re done by sticking a toothpick in the middle. If it comes out clean, they’re ready. If some batter remains, bake for a few more minutes. Let them cool completely (if you can) and then enjoy with a slice of butter and a mug of Dandy Blend. Store any leftovers in an airtight container or freeze them to enjoy longer.

Ingredients:

  • 3 ripe bananas
  • 2 eggs
  • ¼ cup maple syrup
  • ½ teaspoon cinnamon
  • 1 tablespoon Dandy Blend

  • 2 cups rolled oats
  • Pinch of salt

Directions:

  1. Preheat your oven to 350°F and line a muffin tin with 12 liners.
  2. Starting with the wet ingredients, add all ingredients to a blender and blend until smooth.
  3. Distribute batter into liners, and bake for 12-15 minutes.
  4. Let muffins cool completely. Enjoy immediately or store in an airtight container for 3-5 days or freeze for up to 3 months.
