There’s nothing better than biting into a creamy cup of chocolate and nut butter with a hint of sea salt. For many of us, it’s a nostalgic treat that sprinkled its way across our childhood via holidays, birthdays, and decadent late-night snacks. Now, we’ve recreated the beloved recipe to match our new lifestyle with upgraded, school-friendly ingredients. We introduce: sunflower butter cups made with Dandy Blend.

What is Sunflower Butter?

Sunflower butter is a creamy nut butter-like spread made from sunflower seeds. This means it’s entirely nut-free and safe to share and enjoy in schools and on airplanes. Sunflower butter has a similar texture to your favorite creamy nut butter, with a flavor palette somewhere in between cashew butter and peanut butter. In short, it’s delicious, rich, and perfect for these back-to-school friendly treats.

How to Make Sunflower Butter Cups

These treats are so easy to make and they don’t require an oven (win-win). You’ll start by lining a cupcake tray with mini liners. You are welcome to use larger liners but you will need to double the recipe or expect fewer cups.

Next, melt your chocolate down and stir in the Dandy Blend. Pour half of the mixture into your mini liners and use the back of a spoon or a small spatula to coat the sides of the chocolate. This will act as the “wall” of your cups and keep the filling inside.

While that cools in the refrigerator, mix together sunflower butter, coconut sugar if you want a sweeter cup, and sea salt. This is your filling. Distribute it evenly among the firm chocolate cups, gently pressing it down to create an even layer.
Finally, pour the remaining chocolate over the filling to enclose the cups and top with a pinch of sea salt. Refrigerate until firm and enjoy!

Recipe

Homemade Sunflower Butter Cups with Dandy Blend Ingredients:

  • 8 oz. chocolate of choice
  • 1-2 teaspoons Dandy Blend
  • 1/2 cup creamy sunflower butter
  • 1/4 cup coconut sugar (optional)
  • ⅛ teaspoon sea salt, plus a pinch for topping

Directions:

  1. Line a cupcake tray with mini liners.
  2. Melt the chocolate until smooth and stir in the Dandy Blend. Evenly distribute half of the chocolate mixture among your cupcake liners, using a spoon or spatula to coat the sides of the liners. This acts as your cup “wall”.
  3. Refrigerate until firm.
  4. Mix sunflower butter, coconut sugar if using, and sea salt in a small bowl.
  5. Dollop a small amount of sunflower butter mixture into the chocolate cups. Press down gently to smooth against chocolate walls.
  6. Pour the remaining chocolate mixture over the sunflower butter filling and top with sea salt.
  7. Refrigerate until firm and enjoy.
